OK I know that pork is OK fresh in the fridge up to 3 days, yesterday I bought pork ribs, today i put them in a brine first thing this morning and put them back in the fridge. I was expecting company but it got postponed a day...would they be OK if I left them in the brine over night or would they be OK? My brine recipe is 2 liters of water, 1/2 cup salt, and 1/2 cup sugar, 2 tsp each in, oregano, and garlic powder. I don't want them to fall apart on me is the only thing. Please give me your feedback!!
